DESCRIPTIONS:
Smoked paprika is a powdered spice that can be orange or deep red in color and has a vibrant flavor and aroma.
It's also called pimenton. The seasoning is made from ripe paprika pods, which are first dried and then smoked
for a couple of weeks. This spice is very popular in Spain, where it's used in virtually every local dish.
Smoked paprika adds variety and enhances the flavor of borscht and stews, and adds wonderful notes
to roasts, bigos, lecho, and sautés. It's incredibly good for fish and meat marinades. It can be added
to gravies, vegetable casseroles, adjika, and sauces.
Smoked paprika isn't used as a single spice in a dish. A mixture is typically used, along with turmeric,
ginger, garlic, cumin, allspice, cardamom, and a blend of "Italian herbs" (oregano, rosemary, thyme, etc.).
It should be added to food at the end of cooking—with prolonged cooking, paprika loses its rich color and pleasant aroma.
